Quick Easy Egg Biryani without mess
Hello people! How do you do ? This day being a great busy weekend , I have 2 decent delicious recipes for us.(Yeah ! us,I too refer my cookbook sometimes☺). Yesterday,it was my own sissy this time to pester me about cooking egg biryani.Then as usual,I was back to surfing enormous sites..asking kith and kin for something new and easy..nothing turned satisfactory.Ha ha..so that means its time for my style.So the next moment , my brain fused so many recipes to bring this one (and that means you can alter it with many ingredients and make an interesting one anyday).
I made this biryani with regular rice,you can very well try it with basmati rice or seeraga samba for enhanced flavors.Believe me..it's so easy...non-messy and it takes not more than 30 mins for this yummy biryani.I also prepared one quick side-gravy for biryani which also takes less than 15 mins and both of them pair well!! My family took 3 heavy serves ..Don't be afraid of the long list given below,its quick.We just gotta mix everything..Easy isn't it?Why wait?Check both of them and enjoy cooking !! Happy Serving! We need:-
Main Ingredients:
Rice-1cupEggs-4
Water-as required
For Biryani masala:
Onion-1 bigTomato-2 small
Green chili-2
Ginger & Garlic paste -1.5 tbsp (10 garlic cloves-1.5 inch ginger)
Curd-1/2 cup
Lemon - 1/2 a lemon
Mint leaves,Coriander leaves-a handful
Chili powder-1/2 tsp
Garam Masala Powder - 1/2 tsp
Cloves-3
Cinnamon- 3 (1 inch)
Bay leaf-1
Cardamom - 1
Oil-2 tbsp
Ghee-2 tsp
Salt -as required
For roasting egg:
Chili powder - 1 tspTurmeric powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Pepper powder - 1 tsp
Coriander powder - 1 tsp
Salt-1 tsp
Oil-2 tsp
Preparation:
Lets get ready with the preparations..
- Boil 1 cup water in a pan and add the eggs.Let the eggs cook for 15- 20 mins.
- Soak rice in a cup of water
- Finely slice onion,cut the tomatoes and slit the green chilies length-wise.
Method:
- Take a cooker / vessel in which you want to do the biryani. Put all the ingredients under "For Biryani Masala".
- Now keep the vessel on the stove and keep the flame to medium.Mix well and close the lid.Let it bubble and stir once in between till oil floats on surface.(Takes about 10 mins and we need the rice also to be soaked for the same time)
- Drain the soaked rice.Once oil floats on top (By now,you must have found the fragrance filling the kitchen- people would come around to get the flavor!!) add the rice in.
- Usually we use rice to water ratio as 1:2.(we will have some liquid in ,so lets reduce the water)Add 1.5 cups water,
check salt,bring it to a boil and pressure cook for 2 whistles( or simmer for 5 minutes after the first whistle).
- Remove the egg shell and slice them as you wish.(you can even cut them to half)Take care while you cut as they are tender.
- For roasting egg,heat 2 tsp oil in a pan,Add all the spice powders given under "For roasting "
- Now place the eggs in a pan and roast them for 4 mins.Then remove them to plate.
- Release the pressure head from cooker and mix well.Add the roasted eggs and add salt if required.
- Its time for dum..Mix the eggs with biryani.Sprinkle chopped coriander leaves,close the lid without pressure head,simmer for 3 mins.(Just to make the biryani essence peep into eggs)
- Open the lid,mix the rice moderately.
- Tadaa! Our yummy biryani is ready!Serve hot with onion raita or any bland gravy.
