Boiled Egg Onion Roast
Eggs!! Whatever be the form they are always drooling.I just wanted to try an Indian style Egg Roast to accompany my Plain biryani.I thought of making egg biryani but diverted to this scrumptious recipe..The succulent onions and the chilli roasted egg will make you feel heavenly with every bite.Though simple it is worth going for a third serving!! I assure that you will add this to your repertoire.

Serves-3
Ingredients
Boiled Eggs - 3 (each cut into 2)
Onion-1 thinly sliced (big)
Tomato-1 chopped (small)
Green Chilli-1 slit (small)
Turmeric Powder-1 tsp
Chilli Powder-2 tsp
Pepper Powder-1 tsp
Salt - to taste
Curry leaves-few
Water-1 tbsp
Fennel Seeds-1 tsp
Oil-1 tbsp+2tsp
Method
- Heat 1 tbsp oil in a pan , add curry leaves and fennel seeds.Saute for a min till fennel seeds change to golden colour.
- Add in Onions and saute for 2 mins.Throw in the dry powders and saute in oil till raw smell leaves.It takes about 5 mins in low flame.
- Add the chopped tomatoes and green chilli,saute for a min.Sprinkle salt and saute for 5 more mins in medium flame till the mixture combines to a single mass.
- Separate the mixture in the pan and place the eggs in other half . Drizzle 1 tsp oil around eggs and leave for 2 mins on medium flame.Turn the eggs and repeat the same.
- Now mix the sauteed onion mixture and eggs ,sprinkle a tbsp water,cover the pan for 3 mins in low flame.
- Garnish with curry leaves and Serve hot with plain biryani.
These onion eggs tastes wow with biryani,roti types,sambar rice,curd rice or any variety rice.
