Egg Kothu Chapathi recipe - Rotu kada style (Street food)

Spicy Kothu Chapathi recipe with egg with veg gravy


Hey guys!Its me after a break.. This post was in my draft so long..As I said in the biryani gravy post , I was scheduled to do kothu parota that day for that yummy gravy.Suddenly my dad became health conscious ! (not acceptable isn't it). Rarely we make parotas or any maida food at home as any one from my family would object it at the time of preparing.So today it was my dad!Somehow, parota was altered to chapathi (once fixed,we can never think about anything else right?)However I would say my dad gave me another delicacy that day..The gravy was so superb with those soft rotis and with every bite you could feel yumm! yumm! Every bit of the roti had absorbed so much of gravy and turned it as juicy,succulent bits.You have some leftover rotis/chapathis/even pooris? This is one of the yummy alternatives I would suggest.Lets taste it!.Get ready..Set.. go..

Serves-2 generous

We need: 

Chapathi/Roti/Poori-6
Biryani gravy-2 cup
Eggs-3
Cooking Oil-1 tbsp
Onion-1 (chopped)
Tomato-1(roughly chopped)
Curry leaves-few
Green chily-1 (optional)
Chilly Powder-1/2 tsp
Turmeric powder-1/4 tsp
Garam masala powder-1 tsp
Pepper powder-1 tsp
Salt as required

Method:

(Since we gotta do in high flame as most street vendors do ,you must saute and add ingredients immediately once required stage is reached)
  1. Assemble all the items neccesary because we gonna do it quick quick as in road side parota stalls.This is all we need.Chop onion,tomato and slit chily.Tear rotis into small pieces.(you can cut them ot chop them as you wish)
  2. Heat oil in a kadai,add onions and saute on high flame for a min.In a min they turn translucent.Add in curry leaves and slit chily(optional). (Don't saute onions too long, we need it to be crunchy..)


  3. Throw in chopped tomatoes, spice powders and salt.(add spices along with tomato since direct adding gives you immense spicy smoke).Mash tomatoes with laddle and saute them for 2 mins.


  4. Add in roti pieces and break eggs over it.Mix everything and saute till eggs are cooked.Add in gravy,pepper powder and mix (Add more gravy if you need more juicy rotis.If you gonna try this with parotas you must need less gravy than for rotis since rotis tend to absorb more)




     

  5. Now its time for chopping the rotis(kothu chapathi na?).. Turn the flame to low,hold a sharp edged spoon or broad knife and disintegrate the mass randomly.Tin tin clin tun clin din tin tin tin!! ya thats it.. Its ready.








Garnish with coriander leaves and serve hot!!
