Simple Spicy kara kulambu recipe
Kara kulambu is a coconut based gravy that is made with vegetables and taken with steamed rice.This recipe is one of the lip smacking dishes served in all the weddings here in salem.I first tasted kara kulambu in a nearby hotel called "Sarathy".They give packages of sambar,kootu,rasam etc..From then on our love for this dish started.This recipe I am posting here matches the taste of the hotel style kulambu.Kara kulambu has become a compulsory part of our weekend lunch nowadays.I love it with any type of thick vegetable kootu ( I know it is a weird combo for many of you but try it ,you will feel its worth).Let me reveal out my another combo which you will be suprised to know..These puli kulambu and kara kulambu varieties taste yummy with idli and dosa.Try it people it will be divine!!Preparation time: 10 mins

Serves-4
We need:
To roast and grindEdible oil-2 tsp
Coriander seeds-2 tsp
Cumin seeds-1/4 tsp
Fennel seeds - 1/2 tsp
Red chili-2
Chana dal-1 tsp
Shallots-5
Tomato-1/2
Coconut-2 tbsp grated
To temper
Gingely oil-2 tbsp
Mustard seeds-1 tsp
Fenugreek seeds-1 tsp
Dry red chilli-2 nos
Curry leaves-few
Main Ingredients
Shallots-10
Brinjal-4 cut into quarters
Tomato-1/2
Chili powder-1 tsp
Tamarind water-1/2 cup
Salt-as required
Water-1 tsp.
Optional:-
Oil-1 tsp
Sundakai vathal-1 tbsp
Method:
- Heat oil in a kadai and roast sundai vathal.Remove to a pan .
- To same oil add everything under "To roast and grind".Cool and grind it into a paste by adding little water.
- Heat gingely oil in a kadai,temper all the ingredients under "To temper".
- Add shallots and roast till it turns transparent.
- Add brinjal and saute for few mins.
- Throw in tomatoes,salt and saute for 2 mins.
- Pour tamarind water,chili powder and bring it to a boil.
- Now add the ground masala and enough water.Let it boil till oil starts leaving along sides.
- Add the sundai vathal and boil it to required consistency.
