- Add whole shallots ,green chilly, curry leaves and saute them. Saute till onions turn transparent.
- Add the powders and saute in oil until they turn brown. At this stage ,you will get a roasted aroma.
- Add the chopped tomatoes and add salt. Adding salt speeds up the cooking process.
- Cover and cook till oil separates. It will take about 5 mins .
- Add mushrooms and saute. The mushrooms will shrink and give away water.
- Now pour in the ground masala and saute in simmer flame for 2 minutes.
- Pour in required water, cover and cook till mushrooms are done.
- Adjust salt and spice if required. Allow it to boil to get required consistency.
- Garnish with Coriander leaves.
Tadaa! :-) Serve hot with Parotta/Roti/Naan/Dosa/Biryani/Pulav and Enjoy.
Note:
- You can use Potato,Carrots or any vegetables as a substitute for mushroom.
- Cut short your preparation time by doing the chops side by side.
- You can replace Gingelly oil by any vegetable oil but Gingelly oil gives good aroma.
