Mushroom Gravy - For Parotta

Mushroom Gravy 

Hello Everyone!
This is my first post in this blog.Usually food blogs are started with a sweet or dessert. I kinda thought of posting "Paal Kesari" as my first post . Will post it soon..Today I tried this gravy and it was a super hit! :-) Without much delay here it is... Lets get ready!

Cooking time:20-30 mins
Serves-5


Ingredients


Main Ingredients

Mushroom-100gm (chopped)
Ground shallots -1/4 cup (5 Nos)
Shallots-7/Big Onion-1 (chopped)
Tomato -Big (chopped)
Green chilly -1 (slit)
Coriander leaves- few
Salt - as per taste
Water - 2 cup (300ml)

To Season
Mustard seeds - a pinch
Fennel seeds - 1 tsp
Bay leaf - 1
Curry Leaves - few
Gingelly oil -3 tblsp


Powders
Turmeric powder- a pinch
Red Chilli powder- 1 tbsp
Coriander powder -1tbsp
Pepper powder-1 tsp

To Roast and Grind

Clove,Green Cardamom,Cinnamon,Marati Mokku  -1 each
Fennel seeds - 1 tsp
Cumin seeds - 1 tsp
Split Roasted Gram/ Pottukadalai - 1 tbsp
Grated coconut - 1.5 tbsp
Dry red chillies-2
Fenugreek seeds - a pinch
Raw Rice - 1 tsp
Pepper-1 tsp
Coriander seeds-1tbsp
Garlic-3 cloves
Ginger-1 inch
Curry Leaves -2 sprig
Kalpasi- a pinch (optional)

The Formula 


  1. Roast the ingredients given under "To Roast and Grind" with a tsp of oil and grind it to a fine paste adding little water.
  2. Heat oil in a pan, Add seasonings.Once the raw smell leaves, add ground shallots and fry them till they turn brown.
  3. Add whole shallots ,green chilly,curry leaves and saute them. Saute till onions turn transparent.
  4. Add the powders and saute in oil until they turn brown. At this stage ,you will get a roasted aroma.
  5. Add the chopped tomatoes and add salt. Adding salt speeds up the cooking process.
  6. Cover and cook till oil separates.It will take about 5 mins .
  7. Add mushrooms and saute. The mushrooms will shrink and give away water.
  8. Now pour in the ground masala  and saute in simmer flame for 2 minutes.
  9. Pour in required water,cover and cook till mushrooms are done.
  10. Adjust salt and spice if required. Allow it to boil to get required consistency.
  11. Garnish with Coriander leaves.

Tadaa! :-) Serve hot with Parotta/Roti/Naan/Dosa/Biryani/Pulav and Enjoy.



Note:

  • You can use Potato,Carrots or any vegetables as a substitute for mushroom.
  • Cut short your preparation time by doing the chops side by side.
  • You can replace Gingelly oil by any vegetable oil but Gingelly oil gives good aroma.
