Piri Piri Sauce And Peri Peri Potato Wedges/ Potato Crisps
Piri Piri sauce is made with piri piri chillies which is also known as peri peri sauce.They can be made with normal chillies but piri piri chillies give exact taste.You can use them over anything as you like. Throw it over potatoes,meat,any veggies or serve them as a dip. They taste spicy and you can make them super spicy if you want.
These fried potato wedges tastes like spiced french fries.All you need is some dry chillies, garlic, parsley/coriander leaves and some lime juice. With additional ingredients you can make plenty variations.
Add any of these in addition if you want some modifications: capsicum,ginger,oregano,pepper, onion,different chillies,smoked capsicum,different oils or simply give the basic sauce a saute. These are just a few ideas for modification and they taste awesome with everything.I have added the sauce recipe.
Recipe For Peri Peri Potato Wedges
Ingredients
1) For Basic Peri Peri Sauce:
To Grind:
Red Chillies - 5 no. (fresh or dry)
Garlic-4 cloves
Parsley/Coriander leaves-1 tbsp
Lime Juice- From Half a lime
Salt / Sea salt- 1 tsp
Vegetable/Olive oil-1 tbsp
Paprika-2 tsp (if you need more spice-optional)

My Additions To this recipe:
Any Colour Capsicum-1 (optional-used green)
Oregano-2 tsp
2)Main Ingredients
Potato-4 (medium)
Sauce - 2 tbsp
Oil-For Shallow frying (I used 3 tbsp)
Method
- Peel and wash the potatoes.Cut them into wedges as you do for french fries.
- Grind the ingredients given under "For Basic Peri Peri Sauce / Additons if you want" to a smooth paste.Sauce is done!! Store it in a airtight container and refrigerate.It lasts good for a week.
- Marinate the wedges with 2 tbsp sauce and rest it for 30 mins.
- Heat oil in a pan and shallow fry them till they turn crisp.Turn them and saute in between to avoid sticking.It took about 10 mins.
- Strain them and drain on kitchen tissue .Serve hot with dips of your choice.You can sprinkle some chilly flakes,pepper or salt if you need.Enjoy the hot starter!
Serve them as a starter or as a side dish with fried rice..
Note:
- You can use store bought sauce in this recipe.
