Curd rice is ever favorite at home.It is so easy to prepare and also makes tummy happy.There were days when I used to urge my mom to pack curd rice and pickle for lunch daily. Mom always makes it a way to give me veggies. She packs curd rice with kootu or some veggie fry/poriyal. This was how I started eating bitter gourd!! She initially made bitter gourd adding sugar but later we became happy with hot version. Will post it when my mom does it next time. For curd rice, its the curd and its texture which defines the taste. Mom adds plenty of milk and little thick curd when she packs for trip or lunch. The curd will get curdle by noon and it will be fresh. Mom cooks rice till mushy for curd and sambar rice. Since I added wheat rava ,it is finer by its way so there is no need to mash it.Lets go to the recipe..

Serves: 2

We need: 

Cooked rice/Wheat rava-2 cups
Curd- 1 cup fresh (or) 3/4  cup milk + 1/4 cup curd (if packing)
Carrot - 1 shredded
Curry Leaves - 1 sprig
Coriander Leaves - 2 tbsp
Ginger- 2 tsp grated
Green chili - 1 sliced fine
Mustard seeds - 1 tsp
Urad Dal - 1 tsp
Oil- 2 tsp
Salt - as required

Method:


  1. Take rice / wheat rava in a bowl , add salt.Mash rice or wheat rava till it becomes single mass.
  2. Add curd and milk(if using) , mix well.
  3. Heat oil in a pan, add mustard and dal. Once it splutters add chili, ginger and curry leaves.


    Switch off the flame
  4. Add the seasonings to the rice. Throw in carrots and coriander leaves.
  5.  Mix together and serve with pickle or veg fry.
