Vedi cake/Vettu cake Recipe/Cake Flour deep fried balls

Tea Kada Cake Recipe


Tea Shops in Tamil nadu particularly in tuticorin,thirunelveli and salem (as far as I tasted) sell these spongy deep fried balls which has a mild sweet taste . 
They have a melting softer inner shell (the pic above) with crispier outside.It is usually eaten with hot tea and they taste awesome!! .They are known as "Vedi Cake" locally which means split cake named for the cracks appearing on them when they are fried
.

You can even try them with store bought cake flour.I have tried both egg and eggless versions but I personally love egg less version as it is less messy. Try this recipe and feel the taste.. You will love it.


Preparation time: 15 mins
Resting time:20 mins
Cooking time: 3 mins per batch
Serves:14 balls


Ingredients (1 cup = 250 ml)

Maida/All Purpose Flour - 1 Cup
Crystal sugar- 0.5 cup + 3 tbsp (or) 3/4 cup - 1 tbsp
Butter-2 tsp
Salt-1/2 tsp
Baking soda-1/4 tsp
Cardamom powder - 1/4 tsp (or) 1 Small cardamom
Water-2 tbsp
Oil-For deep Frying


Method

  1. Powder sugar and cardamom in a mixer. Mix the powder with 2 tbsp water and stir well until it dissolves.Strain the sugar syrup.



  2. Sift Maida,Salt,Baking soda into a vessel. Now add in the butter and mix.Add sugar water little by little and mix well.


  3. Knead to a soft non-sticky dough.( Add water carefully as the dough has to be non sticky to the vessel.Since flour shouldn't be added at last).Cover and rest it for 20-30 mins.

  4. After 20 mins,Heat oil in a kadai/wok for deep frying.Make gooseberry sized balls from dough. 


  5. Once the oil is hot,drop a small dough in the oil.It must raise immediately to the surface.Now the oil is in correct temperature.

  6. Drop the balls in the oil in batches and leave it for 30 secs.You will find cracks on the dough surface.


  7. Turn few times and fry them golden brown.Remove from oil and strain in kitchen paper.Let it cool to room temperature.

  8. Serve with hot tea or any beverages. I love it as a snack. Yumm!! 

Notes:

  • Don't fry too long , they will become chewy.
  • If using cake batter add only sugar to the dough as per package instructions.
  • you can directly dilute crystal sugar in water if you have cardamom powder.
