Lady's Finger Fry for Roti


Are you bored with the regular chole masala or PB masala for roti?,then you can try this for a change. I hate okras in any masala. So I regularly make sambar or poriyal (semi/dry fry) with them.Today I made a dry sabzi with okra and it was a hit.Its so simple with regular ingredients but the technique is in the time and way of cooking.Everyone at home enjoyed it, you will too.Give this a try.

Serves-4

Ingredients

Okra/Bhindhi/Lady's Finger - 250 gm
Onion-2 medium chopped
Ginger & Garlic Paste-1.5 tsp
Chilli Powder- 1 tsp
Garam Masala-1 tsp
Coriander Powder- 2 tsp
Turmeric Powder-1 tsp
Cumin seeds-1 tsp
Salt to taste
Oil-1 tbsp
Lemon wedge-1

Procedure

  1. Wash and cut the okras into thin slices about 0.5-1 cm.
  2. Heat oil in a pan,add a pinch of chilli powder. Once it smokes throw in the chopped onions with G&G paste and saute for 3 mins in high flame.It must turn light brown.
  3. Now clear the center of pan and add the cumin seeds.It will crackle immediately.(this is to check the heat)

  4. Add the okras at this stage and mix well.Saute them for 3 minutes so that the okra is coated with onion masala.
  5. Now sprinkle the dry spice powders except salt and mix well.(If the mixture turns dry,add some oil)

  6. Cover and leave the okras to cook for 6-7 mins in medium flame(Stir in between twice to avoid sticking).
  7. After this,test whether the okras are cooked.(If not leave it for 5 more minute).
Sprinkle salt before serving.Serve hot with roti and a lime wedge .
