Plain Biryani / Kuska Biryani Recipe (MY Style)

Plain Biryani without Egg, Meat or Vegetables Recipe

Every Sunday is a treat at home with aromatic meal for lunch.This sunday I thought of trying something new so I modified my coconut milk mutton biryani a little and made this one.The result was delicious and aroma of mint with milk will suprise you.Even if you have boiled rice left you can mix in this and make a magic.
Every bite you will taste juicy rice,flavoured milk and mild mint flavor.I served this with egg roast and onion raita..

Serves-3


Ingredients( 1 cup = 250 ml)

Rice - 1 cup
Onion- 1 medium (thinly sliced)
Tomato- 1 medium chopped
Garlic & Ginger paste - 1 tbsp
Green chilli-2 slit
Chilli powder - 1 tsp
Coriander Leaves & Mint leaves -  Handful together
Milk-1 cup
Water-3/4 cup* + 1 cup for soaking
Salt- to taste
Saffron- 3 strands soaked in 1 tbsp milk
Oil- 1 tbsp
Ghee-1 tsp
Fried Onions - 1 tbsp (optional for Garnish)

Seasonings

Cloves-2
Cardamom-1
Cinnamon-1"
Star Anise-1
Bay Leaf - 1
Fennel Seeds-1 tsp

Method

  1. Wash and Soak rice in a cup of water.Heat oil+ghee in a pressure cooker.Add all the ingredients listed under "Seasonings".Fry them for a min.
  2. Add the chilli powder and mix for 10 seconds.Throw the onions,Green chilli ,coriander leaves and mint leaves. Saute for 3 mins.
  3. Add the G & G paste and fry them till raw smell leaves.
  4. Add the chopped tomato and sprinkle salt.Saute till tomatoes turn mushy.
  5. Add the soaked rice and fry them for 2 mins till the rice is coated with the masala. 
  6. Now pour milk + 3/4 cup water+saffron , adjust salt and pressure cook for 3 whistles*
Mix well. ( If you have some left over rice add it now )

  • Garnish with fried onions and mint leaves. Serve hot with Egg roast or Chicken Fry. It tastes goooood with raita too.
Note
  • *Water and cooking time depends on the type of rice.
  • This gives medium spice biryani. You can increase the chilli count to suit your taste.
  • You can even add meat broth instead of water and Coconut milk for milk for a change.
  • Add more mint to turn this into mint biryani.
